Slow cooker recipe: Sweat pepper stuffed with pork mince and carrot

Slow cooker is one of my favourite kitchen appliances. It helps to prepare healthy and tasty dishes quickly and easily. Just need to prepare all ingredients, pop them into the slow cooker and switch it on. You can leave it to cook on its own while you are out or busy with something. You can also set up the timer and your food will be ready by the time you want!
So below is one of my 
favourite recipe:


Sweat pepper stuffed with pork mince and carrot

  • Preparation time: 20 minutes.
  • Slow cooker setting: low
  • Cooking time: 4.5 hours






Ingredients:

  • 6 sweet pepers with seeds off
  • 5 large carrots, peeled and grated
  • 1 medium onion, chopped finely
  • ~ 500 g pork mince
  • ~ 6-7 tbsp sunflower oil (or any other oil)
  • ~ 1 cup vegetable stock (water or by test)
  • salt, black pepper
  • crème fraiche to serve
1. Heat the oil in a frying pan and fry the onion and carrots for 6-8 mins until softened.
2. Place 1/4 of carrots to the stoneware, add the rest of carrots to the pork mince, season and mix well.
3. Stuff peppers with mince mix and stand upright to the stoneware, add stock or water.
4. Place the pot to the heating base and put on the lid. Cook on Low for about 4.5 hours.
5. Serve with 
crème fraiche.
